Ingredients:

  • 1 1/2 cups (180 g) low-moisture, shredded whole milk Mozzarella cheese
  • 2 oz (56 g) full-fat Cream Cheese, softened or cubed
  • 1 large egg, room temperature
  • 1/2 cup (60 g) coconut flour, sifted
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 1 large egg yolk (for wash)
  • 1 tablespoon water (for wash)
  • 2 tablespoons Everything Bagel Seasoning (or desired topping)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Combine the Cheeses: Place the shredded mozzarella and cubed cream cheese into the large microwave-safe bowl.
  3. Melt: Microwave the cheeses in 30-second bursts, stirring vigorously between each burst, until completely melted, smooth, and homogenous (this usually takes 90–120 seconds total). The texture should be stretchy and glossy.
  4. Whisk Dry Ingredients: In a small separate bowl, whisk together the coconut flour, baking powder, and salt. Sifting the flour first helps avoid lumps.
  5. Incorporate Dry: Add the dry ingredient mixture immediately to the hot melted cheese. Mix quickly with a sturdy spatula until a very thick, shaggy dough forms.
  6. Add Egg: Beat the room-temperature egg lightly in a small dish, then add it to the cheese-flour mixture.
  7. Knead (Quickly): Use the spatula or lightly oiled hands to quickly fold and knead the mixture inside the bowl until the egg is fully incorporated and the dough is smooth, cohesive, and easy to handle. Work fast while the dough is still warm.
  8. Divide Dough: Divide the dough evenly into 6 portions. (Using a scale ensures even cooking.)
  9. Shape Bagels: Roll each portion into a small ball, then poke a hole in the centre and gently stretch the ring to about 3 inches (7-8 cm) wide. Ensure the hole is sufficiently wide, as the dough will expand.
  10. Apply Wash and Topping: Whisk the egg yolk and water for the egg wash. Brush the top surface of each bagel generously.
  11. Sprinkle immediately with the Everything Bagel seasoning.
  12. Bake: Place the baking sheet into the preheated oven. Bake for 18–22 minutes, or until the bagels are puffy, golden brown, and feel firm to the touch. Transfer immediately to a wire rack to cool completely.
