Ingredients:
- 1 pound ground beef or turkey
- 1 cup cauliflower rice
- 1/2 cup grated onion
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 large head of green cabbage
- 2 tablespoons olive oil
- 1 cup tomato sauce (low-carb)
- 1 teaspoon dried basil
- 1 teaspoon apple cider vinegar
Instructions:
- Boil water in a large pot, core the cabbage, and carefully peel off 12 large leaves. Blanch leaves in boiling water for 2-3 minutes, then shock in ice water.
- In a mixing bowl, combine ground meat, cauliflower rice, grated onion, garlic, egg, oregano, smoked paprika, salt, and pepper. Mix until well combined.
- Lay a cabbage leaf flat and place a generous spoonful of filling at the base. Fold in the sides and roll up tightly. Repeat with remaining leaves and filling.
- In a separate bowl, mix tomato sauce, basil, apple cider vinegar, salt, and pepper.
- Preheat the oven to 350°F (175°C). Spread a thin layer of sauce on the bottom of the baking dish. Arrange cabbage rolls in the dish and pour remaining sauce over them. Cover with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until heated through. Serve warm and enjoy!
