Ingredients:
- 2 pounds (900g) ground turkey, preferably lean (93% lean)
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 cup (120g) breadcrumbs, plain, dried
- 1/2 cup (120ml) milk, any kind
- 1/4 cup (60ml) fresh parsley, chopped
- 2 tablespoons (30ml) fresh thyme leaves, chopped
- 1 tablespoon (15ml) Dijon mustard
- 1 large egg, lightly beaten
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/2 cup (120ml) ketchup
- 2 tablespoons (30ml) brown sugar, packed
- 1 tablespoon (15ml) apple cider vinegar (or white vinegar)
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan.
- Sauté chopped onion in a little olive oil (or cooking spray) until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant. Let cool slightly.
- In a large mixing bowl, combine ground turkey, sautéed onion mixture, breadcrumbs, milk, parsley, thyme, Dijon mustard, egg, salt, pepper, and garlic powder.
- Gently mix all ingredients with your hands until just combined. Be careful not to overmix!
- Transfer the mixture to the prepared loaf pan and gently shape it into an even loaf.
- In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar until smooth.
- Spread half of the glaze evenly over the top of the meatloaf. Bake for 45 minutes.
- Remove from oven and spread the remaining glaze over the meatloaf.
- Return to the oven and bake for another 10-20 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the loaf.
- Let the meatloaf rest in the pan for 10-15 minutes before slicing and serving. This allows the juices to redistribute. Enjoy this amazing turkey meatloaf recipe!
