Ingredients:
- 1 cup (240 ml) 100% Fruit Juice (no added sugar)
- 2 tablespoons (30 ml) Unflavored Gelatin Powder (high quality)
- 1-2 tablespoons (15-30 ml) Honey or Maple Syrup (to taste)
- ½ teaspoon Lemon Juice (fresh, optional)
Instructions:
- In a small bowl, sprinkle gelatin over ½ cup of the fruit juice. Let it sit for 5-10 minutes to soften (bloom).
- In the saucepan, gently heat the remaining ½ cup of fruit juice over low heat. Do not boil!
- Add the bloomed gelatin mixture to the warm juice. Whisk constantly until the gelatin is completely dissolved and the mixture is smooth and clear.
- Remove from heat. Stir in honey (or maple syrup) and lemon juice (if using). Taste and adjust sweetness as needed.
- Carefully pour the mixture into gummy bear molds (using a dropper or syringe if desired) or spread evenly in a small baking dish.
- Refrigerate for at least 1-2 hours, or until firm and set.
- Once set, gently remove the gummy bears from the molds (or cut the sheet of gummy from the baking dish into squares). Store in an airtight container in the refrigerator.
