Ingredients:

  • 1 cup (240 ml) 100% Fruit Juice (no added sugar)
  • 2 tablespoons (30 ml) Unflavored Gelatin Powder (high quality)
  • 1-2 tablespoons (15-30 ml) Honey or Maple Syrup (to taste)
  • ½ teaspoon Lemon Juice (fresh, optional)

Instructions:

  1. In a small bowl, sprinkle gelatin over ½ cup of the fruit juice. Let it sit for 5-10 minutes to soften (bloom).
  2. In the saucepan, gently heat the remaining ½ cup of fruit juice over low heat. Do not boil!
  3. Add the bloomed gelatin mixture to the warm juice. Whisk constantly until the gelatin is completely dissolved and the mixture is smooth and clear.
  4. Remove from heat. Stir in honey (or maple syrup) and lemon juice (if using). Taste and adjust sweetness as needed.
  5. Carefully pour the mixture into gummy bear molds (using a dropper or syringe if desired) or spread evenly in a small baking dish.
  6. Refrigerate for at least 1-2 hours, or until firm and set.
  7. Once set, gently remove the gummy bears from the molds (or cut the sheet of gummy from the baking dish into squares). Store in an airtight container in the refrigerator.
