Ingredients:
- 1/2 cup (113g) unsalted butter, melted and cooled
- 1/2 cup (100g) light brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp (5ml) pure vanilla extract
- 3 medium overripe bananas, mashed (approx. 300g)
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) fine sea salt
- 1 tsp (2g) ground cinnamon
Instructions:
- In a stand mixer, beat together the melted butter, brown sugar, eggs, and vanilla on medium speed until the batter is smooth and the sugar has integrated.
- Add the mashed bananas to the wet mixture and mix on low speed just until combined.
- Slowly stir in the flour, baking soda, salt, and cinnamon. Use a rubber spatula to fold the mixture by hand until no dry flour remains, keeping the batter slightly lumpy.
- Spoon the batter evenly into a lined 12-cup standard muffin tin.
- Bake at 350°F (175°C) for 18–22 minutes or until the tops are mahogany-colored and a toothpick inserted into the center comes out clean.
