Ingredients:

  • 1/2 cup (113g) unsalted butter, melted and cooled
  • 1/2 cup (100g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 3 medium overripe bananas, mashed (approx. 300g)
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) fine sea salt
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. In a stand mixer, beat together the melted butter, brown sugar, eggs, and vanilla on medium speed until the batter is smooth and the sugar has integrated.
  2. Add the mashed bananas to the wet mixture and mix on low speed just until combined.
  3. Slowly stir in the flour, baking soda, salt, and cinnamon. Use a rubber spatula to fold the mixture by hand until no dry flour remains, keeping the batter slightly lumpy.
  4. Spoon the batter evenly into a lined 12-cup standard muffin tin.
  5. Bake at 350°F (175°C) for 18–22 minutes or until the tops are mahogany-colored and a toothpick inserted into the center comes out clean.
