Ingredients:
- 1 large russet potato (approximately 8-10 oz / 225-285g)
- 1 tablespoon olive oil (15 ml)
- Pinch of sea salt
- Pinch of freshly ground black pepper
- Optional: knob of butter (for serving)
- Toppings of your choice (e.g., beans, cheese)
Instructions:
- Wash the potato thoroughly under cold running water, scrubbing away any dirt. Pat it completely dry with a paper towel.
- Using a fork, prick the potato all over (about 6-8 times). This allows steam to escape.
- In a small bowl, mix the olive oil, salt, and pepper. Rub the mixture evenly over the entire surface of the potato.
- Place the potato on a microwave-safe plate. Microwave on high for 4 minutes. Flip the potato over and microwave for another 4-8 minutes, or until a fork easily pierces the center of the potato.
- To ensure the potato is cooked through, gently squeeze it. It should feel soft and yielding. If it’s still firm, continue microwaving in 1-minute intervals until done.
- For a crispier skin, preheat your oven broiler/grill. Slice the potato open lengthwise and then broil/grill for 2-3 minutes, watching carefully to prevent burning (Optional).
- Slice the potato open lengthwise and fluff the insides with a fork. Top with your favorite toppings and enjoy!
