Ingredients:

  • 1 large russet potato (approximately 8-10 oz / 225-285g)
  • 1 tablespoon olive oil (15 ml)
  • Pinch of sea salt
  • Pinch of freshly ground black pepper
  • Optional: knob of butter (for serving)
  • Toppings of your choice (e.g., beans, cheese)

Instructions:

  1. Wash the potato thoroughly under cold running water, scrubbing away any dirt. Pat it completely dry with a paper towel.
  2. Using a fork, prick the potato all over (about 6-8 times). This allows steam to escape.
  3. In a small bowl, mix the olive oil, salt, and pepper. Rub the mixture evenly over the entire surface of the potato.
  4. Place the potato on a microwave-safe plate. Microwave on high for 4 minutes. Flip the potato over and microwave for another 4-8 minutes, or until a fork easily pierces the center of the potato.
  5. To ensure the potato is cooked through, gently squeeze it. It should feel soft and yielding. If it’s still firm, continue microwaving in 1-minute intervals until done.
  6. For a crispier skin, preheat your oven broiler/grill. Slice the potato open lengthwise and then broil/grill for 2-3 minutes, watching carefully to prevent burning (Optional).
  7. Slice the potato open lengthwise and fluff the insides with a fork. Top with your favorite toppings and enjoy!
