Ingredients:

  • 1 cup (120 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/4 cup (60 ml) unsweetened applesauce
  • 2 cups (480 ml) low-fat vanilla ice cream
  • 4 large egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup (100 g) natural sweetener

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and line the cake pan with parchment paper.
  2. In a bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk eggs, applesauce, and vanilla.
  4. Mix dry and wet ingredients until just combined. Pour into the pan and bake for 25 minutes, until a toothpick comes out clean. Let cool.
  5. Soften the ice cream for 10 minutes. Spread a layer of ice cream over the cooled cake evenly. Return to the freezer for at least 1 hour.
  6. In a clean bowl, whip egg whites and cream of tartar until soft peaks form. Gradually add sweetener while continuing to beat until stiff, glossy peaks form.
  7. Remove the layered cake and ice cream from the freezer. Spread the meringue generously over the ice cream and create peaks with a spatula.
  8. Preheat the oven broiler on high. Bake for 5-10 minutes until meringue turns golden brown.
  9. Let cool slightly before slicing; serve immediately.
