Ingredients:
- 1 cup (120 g) all-purpose flour
- 1/2 cup (100 g) granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/2 tsp vanilla extract
- 1/4 cup (60 ml) unsweetened applesauce
- 2 cups (480 ml) low-fat vanilla ice cream
- 4 large egg whites
- 1/4 tsp cream of tartar
- 1/2 cup (100 g) natural sweetener
Instructions:
- Preheat the oven to 350°F (175°C). Grease and line the cake pan with parchment paper.
- In a bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk eggs, applesauce, and vanilla.
- Mix dry and wet ingredients until just combined. Pour into the pan and bake for 25 minutes, until a toothpick comes out clean. Let cool.
- Soften the ice cream for 10 minutes. Spread a layer of ice cream over the cooled cake evenly. Return to the freezer for at least 1 hour.
- In a clean bowl, whip egg whites and cream of tartar until soft peaks form. Gradually add sweetener while continuing to beat until stiff, glossy peaks form.
- Remove the layered cake and ice cream from the freezer. Spread the meringue generously over the ice cream and create peaks with a spatula.
- Preheat the oven broiler on high. Bake for 5-10 minutes until meringue turns golden brown.
- Let cool slightly before slicing; serve immediately.
