Ingredients:
- 64 fl oz (2 quarts) Good Quality Apple Cider (Unfiltered)
- 4 large Cinnamon Sticks
- 2 teaspoons Whole Cloves
- 1 tablespoon Whole Allspice Berries
- 5 whole pods Star Anise
- 1 Large Orange, sliced thickly (Do not peel)
- 2-inch piece Fresh Ginger, sliced
- 1/4 cup Light Brown Sugar (Optional)
- Pinch Salt (1 g)
Instructions:
- Prepare the Aromatics: Slice the orange and ginger thickly.
- Make the Spice Sachet: Gather the cinnamon sticks, whole cloves, allspice berries, and star anise. Place them securely inside a piece of cheesecloth or a muslin bag and tie tightly with kitchen twine. (This prevents messy straining later.)
- Load the Instant Pot: Pour the apple cider into the inner pot of the Instant Pot.
- Add Flavouring: Carefully place the spice sachet, the sliced orange, ginger, brown sugar (if using), and the pinch of salt into the cider. Do not stir excessively.
- Seal and Cook: Secure the lid, ensure the vent is set to the Sealing position, and select the Manual (or Pressure Cook) setting.
- Set Time: Cook on High Pressure for 5 minutes.
- Natural Release (The Waiting Game): Once the cooking cycle is complete, allow the pressure to Natural Release (NPR) for 10 minutes. Do not skip this step; this is where the spices truly infuse their magic.
- Venting: After 10 minutes of NPR, carefully switch the vent to the Venting position (Quick Release) to release any remaining pressure. Wait until the floating valve drops completely before opening the lid.
- Strain: Carefully remove and discard the spice sachet, the orange slices, and ginger pieces.
- Taste and Adjust: Taste the cider. If you desire it sweeter, stir in a spoonful of brown sugar or maple syrup until dissolved.
- Serve: Ladle the hot spiced cider into heatproof mugs. The Instant Pot can be set to 'Keep Warm' if serving a crowd.
