Ingredients:
- 3 very ripe bananas, mashed (about 1 1/2 cups/ 340g)
- 1/3 cup (75g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/4 teaspoon (1.5g) salt
- 1/2 teaspoon (2.5g) ground cinnamon (optional)
- 1/2 cup (60g) chopped walnuts or pecans (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- Mash bananas in a large bowl until mostly smooth.
- Add melted butter, sugar, egg, and vanilla extract to the mashed bananas. Whisk until well combined.
- In a separate medium bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing with a rubber spatula until just combined. Be careful not to overmix!
- Gently fold in chopped walnuts or pecans (if using).
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
