Ingredients:

  • 3 very ripe bananas, mashed (about 1 1/2 cups/ 340g)
  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1/4 teaspoon (1.5g) salt
  • 1/2 teaspoon (2.5g) ground cinnamon (optional)
  • 1/2 cup (60g) chopped walnuts or pecans (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. Mash bananas in a large bowl until mostly smooth.
  3. Add melted butter, sugar, egg, and vanilla extract to the mashed bananas. Whisk until well combined.
  4. In a separate medium bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet ingredients, mixing with a rubber spatula until just combined. Be careful not to overmix!
  6. Gently fold in chopped walnuts or pecans (if using).
  7. Pour batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  9. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
