Ingredients:

  • 1 packet Indomie Mi Goreng (85g)
  • 1 tbsp vegetable oil (15 ml)
  • 1 clove garlic, minced (approx. 5g)
  • 1/4 cup chopped scallions/spring onions (approx. 25g)
  • 1/4 cup diced bell pepper (any color, approx. 40g)
  • 1 large egg (approx. 50g)
  • Optional Garnish: Sesame seeds, sriracha, crispy fried shallots

Instructions:

  1. Dice bell pepper and chop the spring onions. Mince the garlic.
  2. Cook the Indomie noodles according to package directions (usually boiling in water for 2-3 minutes). Drain, reserving about 1/4 cup of the cooking water.
  3. While noodles are cooking, heat the vegetable oil in a frying pan over medium heat. Add the minced garlic and sauté until fragrant (about 30 seconds – don't let it burn!). Add the diced bell pepper and cook for 1-2 minutes, until slightly softened.
  4. Crack the egg into the frying pan alongside the vegetables. Cook to your liking – sunny-side up, over easy, or scrambled.
  5. Add the drained noodles to the frying pan with the vegetables and egg. Add the Indomie seasoning packet and the reserved cooking water. Toss everything together until well combined and the noodles are coated.
  6. Transfer the noodles to a bowl. Top with the optional garnish of sesame seeds, sriracha, and crispy fried shallots (if using). Dig in!
