Ingredients:

  • 4 thick slices lean meatloaf (approx. 1 lb total)
  • 1 tsp olive oil
  • 4 slices sourdough bread
  • 2 slices extra-sharp white cheddar cheese
  • 1 tbsp light butter spread
  • 2 tbsp unsweetened ketchup
  • 1 tsp Dijon mustard
  • 0.5 tsp Worcestershire sauce
  • 1 pinch smoked paprika

Instructions:

  1. Slice the cold meatloaf into even 1/2-inch thick slabs.
  2. Heat olive oil in a skillet over medium-high heat. Sear meatloaf slices for 2 minutes per side until a crispy, mahogany-colored crust forms.
  3. In a small bowl, whisk together the unsweetened ketchup, Dijon mustard, Worcestershire sauce, and smoked paprika to create the glaze.
  4. Lightly coat the exterior of the sourdough bread slices with the light butter spread.
  5. Place bread in the skillet over medium heat. Layer with the seared meatloaf, a dollop of glaze, and a slice of extra-sharp cheddar.
  6. Top with the second slice of bread and grill until the bread is golden brown and the cheese has reached a velvety, melted state.
