Ingredients:
- 4 thick slices lean meatloaf (approx. 1 lb total)
- 1 tsp olive oil
- 4 slices sourdough bread
- 2 slices extra-sharp white cheddar cheese
- 1 tbsp light butter spread
- 2 tbsp unsweetened ketchup
- 1 tsp Dijon mustard
- 0.5 tsp Worcestershire sauce
- 1 pinch smoked paprika
Instructions:
- Slice the cold meatloaf into even 1/2-inch thick slabs.
- Heat olive oil in a skillet over medium-high heat. Sear meatloaf slices for 2 minutes per side until a crispy, mahogany-colored crust forms.
- In a small bowl, whisk together the unsweetened ketchup, Dijon mustard, Worcestershire sauce, and smoked paprika to create the glaze.
- Lightly coat the exterior of the sourdough bread slices with the light butter spread.
- Place bread in the skillet over medium heat. Layer with the seared meatloaf, a dollop of glaze, and a slice of extra-sharp cheddar.
- Top with the second slice of bread and grill until the bread is golden brown and the cheese has reached a velvety, melted state.
