Ingredients:

  • 3 tbsp Unflavored Gelatin Powder
  • 1/2 cup Cold Filtered Water
  • 1/2 cup Honey
  • 1/2 cup Water
  • 1/4 tsp Sea Salt
  • 1 tsp Pure Vanilla Bean Paste
  • 1/4 cup Arrowroot Powder
  • 2 tbsp Powdered Coconut Sugar

Instructions:

  1. Sprinkle 3 tbsp gelatin over 1/2 cup cold water in your mixer bowl. Note: Let it sit for at least 5 minutes until it looks like thick applesauce.
  2. Combine 1/2 cup honey, 1/2 cup water, and salt in a saucepan.
  3. Bring to a boil over medium heat until the thermometer reads exactly 240°F.
  4. Listen for the sizzle. When the syrup hits the gelatin, it should hiss slightly as the hot liquid dissolves the bloom.
  5. Turn the mixer to low and slowly pour the hot syrup down the side of the bowl.
  6. Increase to high. Whip on the highest setting until the bowl feels lukewarm and the mixture is white and billowing.
  7. Pour in the vanilla bean paste during the last 2 minutes of whipping.
  8. Dust your parchment lined pan generously with the arrowroot and coconut sugar mix.
  9. Transfer the fluff. Pour the mixture into the pan until the surface is level and glossy.
  10. Set and cure. Leave the pan uncovered at room temperature until the surface is dry to the touch and bouncy (about 6 hours).
