Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon (5g) baking powder
  • ½ teaspoon (2.5g) baking soda
  • ½ teaspoon (2.5g) ground cinnamon
  • ¼ teaspoon (1.25g) ground cloves (optional)
  • ¼ teaspoon (1.25g) salt
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • ¾ cup (175ml) honey
  • ½ cup (120ml) strong brewed coffee, cooled
  • 2 tablespoons (30ml) honey (for glaze)
  • 1 tablespoon (15ml) milk or coffee (for glaze)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan (or line with parchment paper).
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, cloves (if using), and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the honey and cooled coffee, beginning and ending with the dry ingredients. Mix until just combined – do not overmix.
  6. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. While the cake is cooling, whisk together the honey and milk (or coffee) for the glaze.
