Ingredients:
- 2 cups (250g) all-purpose flour
- 1 teaspoon (5g) baking powder
- ½ teaspoon (2.5g) baking soda
- ½ teaspoon (2.5g) ground cinnamon
- ¼ teaspoon (1.25g) ground cloves (optional)
- ¼ teaspoon (1.25g) salt
- ½ cup (115g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- ½ cup (100g) packed light brown sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- ¾ cup (175ml) honey
- ½ cup (120ml) strong brewed coffee, cooled
- 2 tablespoons (30ml) honey (for glaze)
- 1 tablespoon (15ml) milk or coffee (for glaze)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan (or line with parchment paper).
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, cloves (if using), and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the honey and cooled coffee, beginning and ending with the dry ingredients. Mix until just combined – do not overmix.
- Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake is cooling, whisk together the honey and milk (or coffee) for the glaze.
