Ingredients:
- 1 lb (450g) carrots, peeled and cut into 1-inch (2.5 cm) pieces or baby carrots
- 2 tablespoons (30 ml) olive oil
- 1/4 teaspoon (1.25 ml) salt
- 1/4 teaspoon (1.25 ml) black pepper
- 4 tablespoons (56g) unsalted butter, melted
- 3 cloves garlic, minced (approximately 1 tablespoon)
- 2 tablespoons (30 ml) honey
- 1 tablespoon (15 ml) soy sauce (low sodium recommended)
- 1 tablespoon (15 ml) chopped fresh parsley, for garnish (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the carrots with olive oil, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet. Roast for 15 minutes.
- While the carrots are roasting, whisk together the melted butter, minced garlic, honey, and soy sauce in a small bowl.
- Remove the carrots from the oven. Pour the honey garlic butter glaze over the carrots and toss to coat evenly.
- Return the carrots to the oven and roast for another 10-15 minutes, or until tender and slightly caramelized, checking every 5 minutes to prevent burning.
- Garnish with fresh parsley (if using) and serve immediately.
