Ingredients:

  • 3 Tbsp Ground Green Cardamom
  • 4 Tbsp Ground Cinnamon (Ceylon preferred)
  • 2 Tbsp Ground Ginger
  • 1 Tbsp Ground Cloves
  • 1 tsp Ground Nutmeg
  • 1 tsp Fine Black Pepper
  • 1/2 cup Powdered Instant Black Tea (finely ground)
  • 1 cup Granulated Sugar or Cane Sugar
  • 1 cup Powdered Dairy Creamer or Powdered Milk (optional)
  • 1/4 tsp Salt

Instructions:

  1. Accurately measure all ingredients listed under the Spice Base and Sweetener & Tea Components sections.
  2. In a small bowl, whisk together all the ground spices (cardamom, cinnamon, ginger, clove, nutmeg, and black pepper) to ensure a homogenous spice blend.
  3. Into the large mixing bowl, individually or collectively sift the powdered instant black tea, sugar, and powdered creamer (if using) to prevent clumping and aerate the mixture.
  4. Gently add the pre-mixed spice blend from the previous step into the sifted powders in the large bowl, along with the pinch of salt.
  5. Using a wire whisk, mix all ingredients vigorously for at least 3 minutes to ensure complete incorporation so that every spoonful of the mix contains the correct ratio of spices, tea, and sugar.
  6. Test the texture by running a spoonful of the final mix through a fine-mesh sieve; if large clumps are present, sift the entire batch again.
  7. Transfer the finished Chai Tea Mix immediately into a clean, dry, airtight container and label clearly with the date.
