Ingredients:
- 2 large eggs
- 2 English muffins (split in half)
- 2 slices of cheese (cheddar, Swiss, or your choice)
- 2 slices of cooked Canadian bacon or ham (optional)
- Salt and pepper to taste
- Butter or non-stick cooking spray (for greasing the pan)
Instructions:
- Toast the English muffin halves until golden brown.
- Preheat a non-stick skillet over medium heat and grease with a little butter or cooking spray. Crack an egg into the skillet, season with salt and pepper, and cook for 3-4 minutes until the whites are set.
- Place the cheese slice on each egg and cover with a lid. Cook until the cheese melts (about 1 minute).
- Layer the egg and cheese on the muffin bottom, add the meat if using, and top with the muffin half.
