Ingredients:
- 2 cups Filtered Water
- 1/4 cup Roughly sliced, unpeeled Fresh Ginger
- 4 Lightly smashed Fresh Garlic cloves
- 4 large sprigs Fresh Thyme
- Zest of 1 large lemon (avoid white pith)
- 1 cup Raw, Local Honey
- 1 Tbsp Fresh Lemon Juice
Instructions:
- In a medium stainless steel saucepan, combine the water, sliced ginger, smashed garlic, thyme sprigs, and lemon zest.
- Bring the mixture to a gentle boil, then immediately reduce the heat to maintain a slow, steady simmer.
- Continue simmering, uncovered, until the liquid volume has visibly reduced by roughly half (approximately 20–25 minutes). The infusion liquid will become fragrant.
- Remove the saucepan from the heat and allow the infusion liquid to cool for 10 minutes. It must be warm, but not boiling hot, before adding honey.
- Strain the infusion mixture through a fine-mesh sieve (lined with cheesecloth if desired) into a clean bowl, ensuring all solids are removed. Discard the spent herbs and aromatics.
- Add the raw honey and fresh lemon juice to the warm, strained liquid. Whisk gently until the honey is fully dissolved and the mixture is uniform.
- Pour the finished Decongestant Syrup into a sterilized, airtight glass jar. Allow it to cool completely to room temperature before sealing and storing it in the refrigerator.
