Ingredients:

  • 2 cups Filtered Water
  • 1/4 cup Roughly sliced, unpeeled Fresh Ginger
  • 4 Lightly smashed Fresh Garlic cloves
  • 4 large sprigs Fresh Thyme
  • Zest of 1 large lemon (avoid white pith)
  • 1 cup Raw, Local Honey
  • 1 Tbsp Fresh Lemon Juice

Instructions:

  1. In a medium stainless steel saucepan, combine the water, sliced ginger, smashed garlic, thyme sprigs, and lemon zest.
  2. Bring the mixture to a gentle boil, then immediately reduce the heat to maintain a slow, steady simmer.
  3. Continue simmering, uncovered, until the liquid volume has visibly reduced by roughly half (approximately 20–25 minutes). The infusion liquid will become fragrant.
  4. Remove the saucepan from the heat and allow the infusion liquid to cool for 10 minutes. It must be warm, but not boiling hot, before adding honey.
  5. Strain the infusion mixture through a fine-mesh sieve (lined with cheesecloth if desired) into a clean bowl, ensuring all solids are removed. Discard the spent herbs and aromatics.
  6. Add the raw honey and fresh lemon juice to the warm, strained liquid. Whisk gently until the honey is fully dissolved and the mixture is uniform.
  7. Pour the finished Decongestant Syrup into a sterilized, airtight glass jar. Allow it to cool completely to room temperature before sealing and storing it in the refrigerator.
