Ingredients:
- 4 cups (600g) fresh blueberries
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tbsp (8g) cornstarch
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 3/4 cup (180ml) whole milk
- 1/2 cup (113g) unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, toss the blueberries with 1/2 cup sugar, lemon juice, and cornstarch until every berry is coated. Pour the mixture directly into a 9x9 inch baking dish.
- In a large bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.
- Pour in the milk and melted butter. Whisk until just combined, leaving small lumps.
- Spoon the batter evenly over the blueberries without stirring the layers.
- Bake for 30–35 minutes until the edges are bubbling and the crust is deep golden brown and firm to the touch.
