Ingredients:

  • 4 cups (600g) fresh blueberries
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tbsp (8g) cornstarch
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 tsp (10g) baking powder
  • 1/2 tsp (3g) salt
  • 3/4 cup (180ml) whole milk
  • 1/2 cup (113g) unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, toss the blueberries with 1/2 cup sugar, lemon juice, and cornstarch until every berry is coated. Pour the mixture directly into a 9x9 inch baking dish.
  3. In a large bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.
  4. Pour in the milk and melted butter. Whisk until just combined, leaving small lumps.
  5. Spoon the batter evenly over the blueberries without stirring the layers.
  6. Bake for 30–35 minutes until the edges are bubbling and the crust is deep golden brown and firm to the touch.
