Ingredients:

  • 1 (8.5 oz) box Jiffy Corn Muffin Mix
  • 1 can (15 oz) sweet corn, drained
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 large egg
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Grease the 9x13-inch baking dish with cooking spray or butter.
  3. In a large mixing bowl
  4. Add salt and pepper to taste, mixing gently.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the casserole to cool for a few minutes before serving warm.
