Ingredients:
- 2 tablespoons olive oil
- 1 pound ground beef (or ground turkey)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 can diced tomatoes (14.5 oz/410 g), undrained
- 4 cups beef broth (or vegetable broth)
- 1 cup cooked rice (white or brown)
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and sauté until translucent (about 5 minutes).
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add ground beef to the pot and cook until browned, breaking it up with a spoon.
- Drain excess fat if necessary.
- Stir in chopped bell peppers and sauté for about 3-4 minutes.
- Add diced tomatoes, beef broth, cooked rice, Italian seasoning, paprika, and salt & pepper.
- Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes.
- Stir occasionally and taste for seasoning adjustments.
- Serve hot, garnished with fresh herbs if desired.
