Ingredients:

  • 1 lb (450g) ground turkey
  • 1 medium onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any colour)
  • 1 can (14 oz/400g) diced tomatoes with juices
  • 1 can (15 oz/425g) kidney beans, drained and rinsed
  • 1 can (15 oz/425g) black beans, drained and rinsed
  • 2 cups (480ml) chicken broth or stock
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (optional for sautéing)

Instructions:

  1. Dice the onion and bell pepper, and mince the garlic.
  2. In a skillet, heat the olive oil over medium heat. Sauté the onion and garlic until fragrant, about 2-3 minutes. Add the bell pepper and cook for another 2 minutes.
  3. In the crockpot, add the ground turkey, sautéed vegetables (if applicable), diced tomatoes, beans, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper.
  4. Stir everything to ensure the ground turkey is evenly distributed and coated with spices.
  5. Place the lid on the crockpot. Cook on low for 6-8 hours or high for 4-5 hours, until the turkey is cooked through and the flavors meld together.
  6. Stir occasionally if possible. Ensure the turkey reaches an internal temperature of 165°F (74°C).
  7. Ladle into bowls and garnish as desired.
