Ingredients:
- 1 lb (450g) ground turkey
- 1 medium onion, diced (about 1 cup)
- 3 cloves garlic, minced
- 1 bell pepper, diced (any colour)
- 1 can (14 oz/400g) diced tomatoes with juices
- 1 can (15 oz/425g) kidney beans, drained and rinsed
- 1 can (15 oz/425g) black beans, drained and rinsed
- 2 cups (480ml) chicken broth or stock
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil (optional for sautéing)
Instructions:
- Dice the onion and bell pepper, and mince the garlic.
- In a skillet, heat the olive oil over medium heat. Sauté the onion and garlic until fragrant, about 2-3 minutes. Add the bell pepper and cook for another 2 minutes.
- In the crockpot, add the ground turkey, sautéed vegetables (if applicable), diced tomatoes, beans, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper.
- Stir everything to ensure the ground turkey is evenly distributed and coated with spices.
- Place the lid on the crockpot. Cook on low for 6-8 hours or high for 4-5 hours, until the turkey is cooked through and the flavors meld together.
- Stir occasionally if possible. Ensure the turkey reaches an internal temperature of 165°F (74°C).
- Ladle into bowls and garnish as desired.
