Ingredients:
- 1 cup (120 g) all-purpose flour
- 1/2 cup (113 g) unsalted butter, cold and cubed
- 1/4 tsp salt
- 2-3 tbsp cold water
- 2 cups (480 g) cottage cheese, drained
- 3 large eggs
- 1/2 cup (60 g) grated cheddar cheese
- 1/4 cup (60 ml) milk
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
- In a mixing bowl, combine flour and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Add cold water gradually, mixing until dough forms.
- Shape dough into a ball, cover, and refrigerate for 15 minutes.
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together cottage cheese, eggs, milk, and herbs until smooth.
- Stir in grated cheddar and season with salt and pepper.
- Roll out the chilled dough on a floured surface and transfer to a greased pie dish.
- Pour the cottage cheese mixture into the prepared crust and spread evenly.
- Bake for 30-40 minutes until the filling is set and top is golden brown.
- Cool slightly before slicing.
