Ingredients:

  • 1 cup (120 g) all-purpose flour
  • 1/2 cup (113 g) unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 2-3 tbsp cold water
  • 2 cups (480 g) cottage cheese, drained
  • 3 large eggs
  • 1/2 cup (60 g) grated cheddar cheese
  • 1/4 cup (60 ml) milk
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Add cold water gradually, mixing until dough forms.
  4. Shape dough into a ball, cover, and refrigerate for 15 minutes.
  5. Preheat your oven to 375°F (190°C).
  6. In a bowl, whisk together cottage cheese, eggs, milk, and herbs until smooth.
  7. Stir in grated cheddar and season with salt and pepper.
  8. Roll out the chilled dough on a floured surface and transfer to a greased pie dish.
  9. Pour the cottage cheese mixture into the prepared crust and spread evenly.
  10. Bake for 30-40 minutes until the filling is set and top is golden brown.
  11. Cool slightly before slicing.
