Ingredients:

  • 1 lb chuck roast, trimmed and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup bell peppers, sliced
  • 1 cup red onion, sliced
  • 1 cup sliced mushrooms
  • 2 tbsp balsamic vinegar
  • 4 hearty slices of sourdough or ciabatta bread
  • ½ cup mayonnaise
  • 1 cup fresh spinach leaves
  • 4 slices of cheese (optional, like cheddar or provolone)

Instructions:

  1. In a mixing bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Add cubed chuck roast and coat. Let marinate for at least 15 minutes.
  2. Heat a large skillet over medium-high heat. Add sliced bell peppers, onions, and mushrooms. Drizzle with balsamic vinegar and sauté for 5-7 minutes until softened.
  3. Preheat grill or grill pan over medium-high heat. Add marinated chuck roast cubes and grill for about 10-12 minutes, turning occasionally, until desired doneness.
  4. Toast sourdough or ciabatta slices on the grill or in the skillet until golden brown.
  5. Spread mayonnaise on one side of each slice of bread. Layer fresh spinach, grilled meat, sautéed vegetables, and cheese if using. Top with another slice of bread.
  6. Slice sandwiches in half and serve warm.
