Ingredients:
- 1 lb chuck roast, trimmed and cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup bell peppers, sliced
- 1 cup red onion, sliced
- 1 cup sliced mushrooms
- 2 tbsp balsamic vinegar
- 4 hearty slices of sourdough or ciabatta bread
- ½ cup mayonnaise
- 1 cup fresh spinach leaves
- 4 slices of cheese (optional, like cheddar or provolone)
Instructions:
- In a mixing bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Add cubed chuck roast and coat. Let marinate for at least 15 minutes.
- Heat a large skillet over medium-high heat. Add sliced bell peppers, onions, and mushrooms. Drizzle with balsamic vinegar and sauté for 5-7 minutes until softened.
- Preheat grill or grill pan over medium-high heat. Add marinated chuck roast cubes and grill for about 10-12 minutes, turning occasionally, until desired doneness.
- Toast sourdough or ciabatta slices on the grill or in the skillet until golden brown.
- Spread mayonnaise on one side of each slice of bread. Layer fresh spinach, grilled meat, sautéed vegetables, and cheese if using. Top with another slice of bread.
- Slice sandwiches in half and serve warm.
