Ingredients:

  • 1/2 cup Plain Non-fat Greek Yogurt
  • 2 tbsp Extra Virgin Olive Oil
  • 1/4 cup Dijon Mustard
  • 3 tbsp Raw Local Honey
  • 1 tbsp Apple Cider Vinegar
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Fine Sea Salt
  • 1/8 tsp Cracked Black Pepper

Instructions:

  1. Place the 1/2 cup Plain Non fat Greek Yogurt into a medium glass bowl.
  2. Add the 1/4 cup Dijon Mustard and 3 tbsp Raw Local Honey to the yogurt.
  3. Whisk these three together until the mixture is a uniform pale yellow color.
  4. Pour in the 1 tbsp Apple Cider Vinegar and whisk gently.
  5. Slowly drizzle in the 2 tbsp Extra Virgin Olive Oil while whisking constantly.
  6. Continue whisking for about 45 seconds until the oil is fully absorbed and the surface is glossy.
  7. Sprinkle in the 1/2 tsp Garlic Powder, 1/4 tsp Fine Sea Salt, and 1/8 tsp Cracked Black Pepper.
  8. Give it one final vigorous whisk to distribute the spices.
  9. Taste the dressing with a leaf of lettuce. Check if the tang and sweetness are in harmony.
  10. Transfer to a jar and let it sit for at least 15 minutes before serving.
