Ingredients:

  • 1 cup (90g) old fashioned rolled oats
  • 1 cup (240ml) milk of choice
  • 1 tablespoon (12g) chia seeds
  • 1/2 cup (120g) Greek yogurt
  • 1 teaspoon (5ml) vanilla extract
  • 1 large (120g) ripe banana
  • 1 tablespoon (12g) brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt

Instructions:

  1. In a medium bowl, peel the banana and mash it with a fork until it reaches a smooth, liquid-like consistency with only a few small lumps remaining.
  2. Stir the brown sugar, cinnamon, vanilla extract, and salt into the mashed banana until the flavor is evenly distributed.
  3. Add the rolled oats, chia seeds, Greek yogurt, and milk to the bowl. Stir vigorously until no dry clumps of oats remain and the chia seeds are well-dispersed.
  4. Divide the mixture evenly between two glass jars and secure the lids tightly.
  5. Refrigerate for at least 6 hours, though overnight is preferred, to allow the oats to absorb the liquid and thicken.
  6. Before eating, give the oats a quick stir. If they are too thick, splash in a tablespoon of milk and add fresh toppings.
