Ingredients:
- 1 cup (90g) old fashioned rolled oats
- 1 cup (240ml) milk of choice
- 1 tablespoon (12g) chia seeds
- 1/2 cup (120g) Greek yogurt
- 1 teaspoon (5ml) vanilla extract
- 1 large (120g) ripe banana
- 1 tablespoon (12g) brown sugar
- 1/2 teaspoon ground cinnamon
- 1 pinch salt
Instructions:
- In a medium bowl, peel the banana and mash it with a fork until it reaches a smooth, liquid-like consistency with only a few small lumps remaining.
- Stir the brown sugar, cinnamon, vanilla extract, and salt into the mashed banana until the flavor is evenly distributed.
- Add the rolled oats, chia seeds, Greek yogurt, and milk to the bowl. Stir vigorously until no dry clumps of oats remain and the chia seeds are well-dispersed.
- Divide the mixture evenly between two glass jars and secure the lids tightly.
- Refrigerate for at least 6 hours, though overnight is preferred, to allow the oats to absorb the liquid and thicken.
- Before eating, give the oats a quick stir. If they are too thick, splash in a tablespoon of milk and add fresh toppings.
