- 3 large Egg Whites
- 1 large Whole Egg
- ½ cup Skimmed Milk (or Unsweetened Almond Milk)
- 1 Tbsp Maple Syrup (Grade A or B)
- 1 tsp Pure Vanilla Extract
- 1 tsp Ground Cinnamon
- Pinch Fine Sea Salt
- 4 slices Sturdy Wholemeal or Sourdough Bread (1-inch thick)
- High-Heat Cooking Spray (or Coconut Oil)
Instructions:
- Combine the Wet Ingredients: In the shallow dish, whisk together the egg whites, whole egg, skimmed milk, maple syrup, vanilla extract, cinnamon, and salt until the mixture is uniform, slightly frothy, and all ingredients are fully incorporated.
- Taste Test (Optional): Dip a clean teaspoon into the batter and taste for adequate sweetness and spice. Adjust cinnamon or maple syrup if desired.
- Soak Quickly: Place one slice of wholemeal bread into the prepared batter. Allow it to soak for no more than 30 seconds per side. The goal is to fully coat the exterior without allowing the bread to become mushy.
- Drain Excess: Lift the slice and allow any excess batter to drip off back into the dish. Set aside on a separate plate while you heat the pan.
- Heat the Pan: Place a non-stick pan over medium heat. Once hot, lightly coat the surface with a quick spray of cooking oil or a tiny pat of coconut oil. The pan should be hot enough to sizzle immediately.
- Cook and Golden: Carefully place the soaked bread slices into the hot pan. Cook undisturbed for 3 to 4 minutes until the bottom is deeply golden brown and the edges look set.
- Flip and Finish: Gently flip the slices using a spatula. Cook the second side for another 3 to 4 minutes until golden and cooked through. The toast should feel firm when pressed lightly.
- Keep Warm: Transfer the cooked French Toast to a wire rack (to prevent steaming) while you repeat the process with the remaining slices.
- Serve: Serve immediately with your chosen 'guiltless' toppings, such as Greek yogurt and mixed berries.
