Ingredients:
- 1 lb lean ground beef (90% lean)
- 1 tbsp olive oil
- 1 medium yellow onion, thinly sliced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 bell peppers (red, green, and yellow), sliced into strips
- 1 tbsp fresh lime juice
- 1/4 cup fresh cilantro, chopped
- 8 flour tortillas (medium size)
Instructions:
- Slice the bell peppers and onions into uniform strips. In a small bowl, whisk together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a 12-inch cast iron skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula, and cook until mahogany-colored and no longer pink. Drain all but one tablespoon of grease from the pan.
- Increase heat to high. Add sliced onions and bell peppers; sauté for 4–6 minutes, stirring occasionally, until edges are charred but vegetables retain a slight snap.
- Sprinkle the fajita seasoning over the mixture and stir constantly for 2 minutes to toast the spices. Remove from heat and stir in fresh lime juice and chopped cilantro.
- Spoon the beef and pepper mixture into warmed flour tortillas and serve immediately.
