Ingredients:
- 1.5 lb lean ground beef (90/10 or 85/15 blend)
- 1 tsp kosher salt
- ½ tsp freshly cracked black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper
Instructions:
- In a large bowl, combine the chilled ground beef with the seasoning blend (salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper).
- Using your fingertips, lightly fold the spices into the meat. Stop immediately once distributed to avoid overworking the protein.
- Divide the beef into four 6 oz portions and form them into discs roughly 1 inch thick.
- Use your thumb to create a shallow indentation (dimple) in the center of each patty to prevent puffing during cooking.
- Heat a cast iron skillet or grill to medium-high heat.
- Place patties in the pan and sear for 3-4 minutes per side. For smash burgers, press flat with a spatula and sear for 2 minutes per side.
- Remove the burgers when the internal temperature reaches 155°F (68°C).
- Let the patties rest on a plate for 5 minutes to allow juices to redistribute.
