Ingredients:

  • 1.5 lb lean ground beef (90/10 or 85/15 blend)
  • 1 tsp kosher salt
  • ½ tsp freshly cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper

Instructions:

  1. In a large bowl, combine the chilled ground beef with the seasoning blend (salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper).
  2. Using your fingertips, lightly fold the spices into the meat. Stop immediately once distributed to avoid overworking the protein.
  3. Divide the beef into four 6 oz portions and form them into discs roughly 1 inch thick.
  4. Use your thumb to create a shallow indentation (dimple) in the center of each patty to prevent puffing during cooking.
  5. Heat a cast iron skillet or grill to medium-high heat.
  6. Place patties in the pan and sear for 3-4 minutes per side. For smash burgers, press flat with a spatula and sear for 2 minutes per side.
  7. Remove the burgers when the internal temperature reaches 155°F (68°C).
  8. Let the patties rest on a plate for 5 minutes to allow juices to redistribute.
