Ingredients:

  • 1 lb lean ground beef (90% lean)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1/4 tsp onion powder
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Heat the olive oil in a 12-inch cast iron or stainless steel skillet over medium-high heat.
  2. Add the ground beef to the skillet, seasoning with salt, pepper, and garlic powder. Break the meat apart with a spatula and cook until deeply browned and no longer pink, scraping up the brown bits (fond) from the bottom of the pan.
  3. Reduce the heat to medium. Sprinkle the all-purpose flour evenly over the browned beef and stir constantly for 2 minutes until the flour loses its raw scent and turns a light golden brown.
  4. Slowly pour in the beef broth while whisking or stirring vigorously to prevent lumps. Stir in the Worcestershire sauce and onion powder.
  5. Bring the mixture to a gentle simmer for 5–7 minutes until the sauce is thickened enough to coat the back of a spoon and appears glossy and mahogany-colored.
  6. Garnish with chopped fresh parsley before serving.
