Ingredients:
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 (6-ounce) frozen chicken breasts (about 170 g each)
Instructions:
- Whisk together the olive oil, lemon juice, minced garlic, parsley, thyme, salt, and pepper in a bowl.
- Place the frozen chicken breasts in the marinade and ensure they are well coated. Cover and refrigerate for 30 minutes.
- Preheat the grill or grill pan to medium-high heat.
- Remove chicken from the marinade and let excess marinade drip off. Grill for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing. Serve with your choice of sides.
