Ingredients:

  • 1 pound (450g) large carrots, peeled and cut into 1/2-inch thick batons
  • 2 tablespoons (30ml) olive oil
  • 1/4 teaspoon (1.5g) sea salt
  • 1/4 teaspoon (1.5g) black pepper
  • 2 tablespoons (30ml) honey
  • 2 tablespoons (30ml) Dijon mustard
  • 1 tablespoon (15ml) apple cider vinegar (or white wine vinegar)
  • 1 tablespoon (15ml) chopped fresh parsley (optional garnish)

Instructions:

  1. Toss carrots with olive oil, salt, and pepper in a bowl. Ensure they're evenly coated.
  2. Heat grill to medium-high heat (around 375-400°F / 190-205°C). Make sure the grates are clean!
  3. Arrange the carrots in a single layer on the grill grates. Grill for 3-4 minutes per side, until tender-crisp and slightly charred.
  4. While the carrots are grilling, whisk together honey, Dijon mustard, and apple cider vinegar in a small bowl.
  5. Remove the grilled carrots from the grill and immediately brush with the honey-dijon glaze. Garnish with fresh parsley, if using, and serve immediately.
