Ingredients:

  • 1.5 lbs Brussels sprouts, trimmed and halved lengthwise
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Red pepper flakes, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Trim the Brussels sprouts and cut them in half lengthwise. Remove any loose outer leaves.
  3. In a large bowl, toss the halved Brussels sprouts with olive oil, minced garlic, salt, and pepper. Ensure the sprouts are evenly coated.
  4. Spread the Brussels sprouts in a single layer on a baking sheet lined with parchment paper (for easier cleanup).
  5. Roast in the preheated oven for 20 minutes.
  6. Remove the baking sheet from the oven, and sprinkle the grated Parmesan cheese evenly over the sprouts.
  7. Return to the oven and roast for another 5-10 minutes, or until the Brussels sprouts are tender-crisp and the Parmesan is golden brown and slightly crispy.
  8. Remove from the oven, sprinkle with red pepper flakes (if using), and serve immediately.
