Ingredients:
- 1 lb (450g) sirloin steak, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons (57g) unsalted butter
- 4 cloves garlic, minced (about 1 tablespoon)
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
Instructions:
- Pat beef cubes dry with paper towels and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the beef cubes in a single layer (work in batches if necessary to avoid overcrowding the pan). Sear for 2-3 minutes per side, until browned but still slightly pink inside (or cooked to your desired doneness).
- Remove the beef from the skillet and set aside. Reduce heat to medium. Add butter to the skillet and let it melt. Add minced garlic, thyme, and red pepper flakes (if using). Cook for about 1 minute, until fragrant (but don't let the garlic burn!).
- Return the beef to the skillet and toss to coat in the garlic butter sauce.
- Sprinkle with fresh parsley and serve immediately.
