- 1.5 lbs chicken breast, cut into 1-inch cubes
- 1 tsp sea salt
- 0.5 tsp coarse black pepper
- 1 tbsp avocado oil
- 4 tbsp salted butter, cold
- 4 cloves garlic, minced
- 0.25 tsp red pepper flakes
- 1 tbsp fresh parsley, chopped
- 1 tsp lemon juice
Instructions:
- Pat the chicken cubes with paper towels until completely dry to ensure a proper sear. Season with sea salt and black pepper immediately before cooking.
- Heat a large cast-iron skillet over medium-high heat and add avocado oil.
- Add chicken bites in a single layer, working in batches if necessary to avoid crowding. Sear for 3-4 minutes until a deep golden-brown crust forms, then flip and cook for another 3-4 minutes until nearly cooked through.
- Reduce heat to medium-low. Move chicken to one side and add minced garlic and red pepper flakes to the center, sautéing for 30 seconds until fragrant.
- Add the cold butter, lemon juice, and fresh parsley. Toss the chicken continuously as the butter melts to create a creamy, stable emulsion that coats the meat.
- Remove from heat once the chicken is fully glazed and serves immediately.
