Ingredients:

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 1 tsp sea salt
  • 0.5 tsp coarse black pepper
  • 1 tbsp avocado oil
  • 4 tbsp salted butter, cold
  • 4 cloves garlic, minced
  • 0.25 tsp red pepper flakes
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice

Instructions:

  1. Pat the chicken cubes with paper towels until completely dry to ensure a proper sear. Season with sea salt and black pepper immediately before cooking.
  2. Heat a large cast-iron skillet over medium-high heat and add avocado oil.
  3. Add chicken bites in a single layer, working in batches if necessary to avoid crowding. Sear for 3-4 minutes until a deep golden-brown crust forms, then flip and cook for another 3-4 minutes until nearly cooked through.
  4. Reduce heat to medium-low. Move chicken to one side and add minced garlic and red pepper flakes to the center, sautéing for 30 seconds until fragrant.
  5. Add the cold butter, lemon juice, and fresh parsley. Toss the chicken continuously as the butter melts to create a creamy, stable emulsion that coats the meat.
  6. Remove from heat once the chicken is fully glazed and serves immediately.
