Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) cubes
- 1/2 cup (60g) all-purpose flour, plus more for dusting if needed
- 1 teaspoon (5ml) garlic powder
- 1/2 teaspoon (2.5ml) paprika
- 1/4 teaspoon (1.25ml) salt
- 1/4 teaspoon (1.25ml) black pepper
- 2 tablespoons (30ml) olive oil
- 6 tablespoons (85g) unsalted butter
- 6 cloves garlic, minced
- 1/4 cup (60ml) chicken broth (or white wine if you're feeling fancy!)
- 2 tablespoons (30ml) freshly squeezed lemon juice
- 1 tablespoon (15ml) chopped fresh parsley
- 1/4 teaspoon (1.25ml) red pepper flakes (optional, for a little kick)
- Salt and pepper to taste
Instructions:
- In a bowl, combine flour, garlic powder, paprika, salt, and pepper. Add the chicken cubes and toss to coat evenly.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer (work in batches if needed to avoid overcrowding). Cook until golden brown on all sides and cooked through (internal temperature reaches 165°F/74°C). Remove chicken from skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant (about 1 minute), being careful not to burn it.
- Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2-3 minutes, or until slightly reduced.
- Stir in the parsley and red pepper flakes (if using). Season with salt and pepper to taste.
- Add the cooked chicken back to the skillet and toss to coat evenly in the garlic butter sauce.
