Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) cubes
  • 1/2 cup (60g) all-purpose flour, plus more for dusting if needed
  • 1 teaspoon (5ml) garlic powder
  • 1/2 teaspoon (2.5ml) paprika
  • 1/4 teaspoon (1.25ml) salt
  • 1/4 teaspoon (1.25ml) black pepper
  • 2 tablespoons (30ml) olive oil
  • 6 tablespoons (85g) unsalted butter
  • 6 cloves garlic, minced
  • 1/4 cup (60ml) chicken broth (or white wine if you're feeling fancy!)
  • 2 tablespoons (30ml) freshly squeezed lemon juice
  • 1 tablespoon (15ml) chopped fresh parsley
  • 1/4 teaspoon (1.25ml) red pepper flakes (optional, for a little kick)
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine flour, garlic powder, paprika, salt, and pepper. Add the chicken cubes and toss to coat evenly.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer (work in batches if needed to avoid overcrowding). Cook until golden brown on all sides and cooked through (internal temperature reaches 165°F/74°C). Remove chicken from skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant (about 1 minute), being careful not to burn it.
  4. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2-3 minutes, or until slightly reduced.
  5. Stir in the parsley and red pepper flakes (if using). Season with salt and pepper to taste.
  6. Add the cooked chicken back to the skillet and toss to coat evenly in the garlic butter sauce.
