Ingredients:
- 3 large ripe bananas (approx. 450g)
- 0.5 cup creamy peanut butter (125g)
- 1 cup dark chocolate chips (175g)
- 1 tablespoon coconut oil (15ml)
- 1 teaspoon flaky sea salt
- 2 tablespoons crushed peanuts (20g)
Instructions:
- Line a large baking sheet with parchment paper or a silicone mat to prevent sticking.
- Peel and slice bananas into uniform rounds approximately 1/2-inch thick.
- Place half of the banana slices on the tray and top each with 1/2 teaspoon of peanut butter. Place a second banana slice on top to create a sandwich.
- Flash freeze the banana sandwiches for 30 minutes until the peanut butter is firm.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in 30-second intervals, stirring until glossy and smooth.
- Using a fork, dip each frozen banana sandwich into the chocolate, tapping off excess, and return to the parchment paper.
- Immediately sprinkle with sea salt or crushed peanuts while the chocolate is wet.
- Freeze for an additional 30 minutes until the chocolate shell is completely set and snappy.
