Ingredients:

  • 3 large ripe bananas (approx. 450g)
  • 0.5 cup creamy peanut butter (125g)
  • 1 cup dark chocolate chips (175g)
  • 1 tablespoon coconut oil (15ml)
  • 1 teaspoon flaky sea salt
  • 2 tablespoons crushed peanuts (20g)

Instructions:

  1. Line a large baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Peel and slice bananas into uniform rounds approximately 1/2-inch thick.
  3. Place half of the banana slices on the tray and top each with 1/2 teaspoon of peanut butter. Place a second banana slice on top to create a sandwich.
  4. Flash freeze the banana sandwiches for 30 minutes until the peanut butter is firm.
  5. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in 30-second intervals, stirring until glossy and smooth.
  6. Using a fork, dip each frozen banana sandwich into the chocolate, tapping off excess, and return to the parchment paper.
  7. Immediately sprinkle with sea salt or crushed peanuts while the chocolate is wet.
  8. Freeze for an additional 30 minutes until the chocolate shell is completely set and snappy.
