Ingredients:
- 1.5 lbs white fish fillets (Cod, Tilapia, or Haddock)
- 1 tbsp lemon juice
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp cayenne pepper
- 2 tsp sea salt
- 1 tsp freshly cracked black pepper
- 1/2 cup avocado oil
Instructions:
- Pat the fish fillets with paper towels until bone-dry and tacky. Drizzle the 1 tbsp lemon juice over the fillets and let them sit for 2 minutes.
- In a shallow bowl, whisk together the all-purpose flour, cornstarch, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper.
- Press each fillet firmly into the flour mixture, shake off excess. Let rest for 3 minutes.
- Heat avocado oil in a cast iron skillet until the oil shimmering and a pinch of flour sizzles instantly. Fry fillets for 3-4 minutes per side until the crust is deep golden and the fish is opaque and flakes easily with a fork.
- Immediately transfer the fish to a wire cooling rack set over a baking sheet to maintain 360-degree air circulation and prevent sogginess.
