Ingredients:
- 1 pound (450g) fresh cherries, pitted and halved
- 3 large eggs
- 1 cup (240ml) whole milk
- 1/2 cup (100g) granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1/2 cup (65g) all-purpose flour
- 2 tablespoons (30g) unsalted butter, melted, plus extra for greasing
- Powdered sugar for dusting (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- Wash, pit, and halve the cherries; set aside.
- In a mixing bowl, whisk together the eggs, granulated sugar, vanilla, and salt until well combined.
- Gradually whisk in the milk and melted butter.
- Gently fold in the flour until just combined; do not overmix.
- Grease the pie dish with butter.
- Spread the cherries evenly in the bottom of the dish.
- Pour the batter over the cherries.
- Bake in the preheated oven for 35-40 minutes, or until puffed and golden brown.
- Insert a knife in the center to check for doneness; it should come out clean.
- Allow to cool slightly before dusting with powdered sugar and slicing. Serve warm or at room temperature.
