Ingredients:

  • 1 pound (450g) fresh cherries, pitted and halved
  • 3 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup (65g) all-purpose flour
  • 2 tablespoons (30g) unsalted butter, melted, plus extra for greasing
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Wash, pit, and halve the cherries; set aside.
  3. In a mixing bowl, whisk together the eggs, granulated sugar, vanilla, and salt until well combined.
  4. Gradually whisk in the milk and melted butter.
  5. Gently fold in the flour until just combined; do not overmix.
  6. Grease the pie dish with butter.
  7. Spread the cherries evenly in the bottom of the dish.
  8. Pour the batter over the cherries.
  9. Bake in the preheated oven for 35-40 minutes, or until puffed and golden brown.
  10. Insert a knife in the center to check for doneness; it should come out clean.
  11. Allow to cool slightly before dusting with powdered sugar and slicing. Serve warm or at room temperature.
