Ingredients:

  • 2 medium cucumbers (approx. 400g), thinly sliced
  • 1 small red onion (approx. 100g), thinly sliced
  • 1 cup (150g) cherry tomatoes, halved
  • 1 bell pepper (any color, approx. 150g), diced
  • ¼ cup (60ml) olive oil
  • 2 tablespoons (30ml) white wine vinegar
  • 1 teaspoon (5g) Dijon mustard
  • Salt and black pepper to taste
  • 2 tablespoons (8g) fresh dill or parsley, chopped

Instructions:

  1. Prepare the vegetables: Wash and thinly slice the cucumbers, peel and slice the red onion, halve the cherry tomatoes, and dice the bell pepper.
  2. Whisk the dressing: In a small bowl, combine the olive oil, white wine vinegar, Dijon mustard, salt, and black pepper. Whisk until well blended.
  3. Combine ingredients: In a large mixing bowl, add the cucumbers, red onion, cherry tomatoes, and bell pepper. Pour the dressing over the vegetables and toss gently until evenly coated.
  4. Garnish and serve: Sprinkle the chopped dill or parsley on top, serve immediately or chill for a few minutes before serving.
