Ingredients:
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh lime juice
- 3 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1.5 lbs boneless, skinless chicken breasts
Instructions:
- Pound the chicken breasts to an even thickness. Note: This ensures they cook in the same amount of time
- Place the pounded chicken breasts into a gallon sized freezer bag.
- Whisk together the olive oil, lime juice, minced garlic, salt, black pepper, dried oregano, and red pepper flakes in a small bowl. Note: Mixing separately ensures the salt is evenly distributed
- Pour the marinade over the chicken in the freezer bag.
- Squeeze out all excess air and seal the bag tightly. Note: Removing air prevents freezer burn
- Lay the bag flat in the freezer. until frozen solid
- Transfer the bag to the refrigerator 24 hours before you plan to eat. Note: This is the critical marinating thaw phase
- Preheat the grill to medium high heat.
- Remove chicken from the bag and grill for 6–8 minutes per side. until the internal temperature reaches 165°F (74°C)
- Let the meat rest for 5 minutes before slicing. Note: This keeps the juices from running out
