Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1.5 lbs boneless, skinless chicken breasts

Instructions:

  1. Pound the chicken breasts to an even thickness. Note: This ensures they cook in the same amount of time
  2. Place the pounded chicken breasts into a gallon sized freezer bag.
  3. Whisk together the olive oil, lime juice, minced garlic, salt, black pepper, dried oregano, and red pepper flakes in a small bowl. Note: Mixing separately ensures the salt is evenly distributed
  4. Pour the marinade over the chicken in the freezer bag.
  5. Squeeze out all excess air and seal the bag tightly. Note: Removing air prevents freezer burn
  6. Lay the bag flat in the freezer. until frozen solid
  7. Transfer the bag to the refrigerator 24 hours before you plan to eat. Note: This is the critical marinating thaw phase
  8. Preheat the grill to medium high heat.
  9. Remove chicken from the bag and grill for 6–8 minutes per side. until the internal temperature reaches 165°F (74°C)
  10. Let the meat rest for 5 minutes before slicing. Note: This keeps the juices from running out
