Ingredients:

  • 1 cup (120g) Protein Pancake Powder (e.g., Kodiak Cakes Power Cakes Buttermilk)
  • 1 cup (240ml) Milk (dairy or non-dairy)
  • 1 Large Egg
  • 1 tablespoon (15ml) Melted Butter or Coconut Oil (for greasing the pan)
  • 1/2 teaspoon Vanilla Extract (2.5ml) (optional)

Instructions:

  1. In a large bowl, whisk together the protein pancake powder, milk, egg, and vanilla extract (if using) until just combined. Be careful not to overmix; a few lumps are fine.
  2. Heat a non-stick frying pan or griddle over medium heat. Lightly grease the pan with melted butter or coconut oil.
  3. Pour ¼ cup of batter onto the hot pan for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Look for bubbles forming on the surface before flipping.
  4. If making a large batch, keep cooked pancakes warm in a preheated oven (around 200°F/95°C) until ready to serve.
  5. Stack the pancakes and top with your favourite toppings. Drizzle generously with maple syrup or honey.
