Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp fine sea salt
  • 1.25 cups buttermilk
  • 1 large egg, room temperature
  • 3 tbsp unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 1 can whipped cream
  • 2 medium bananas, sliced into rounds
  • 20 fresh blueberries
  • 3 strawberries, sliced thin
  • 1 tbsp shredded coconut

Instructions:

  1. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and sea salt.
  2. In a separate jug or bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Whisk until just combined, ensuring you do not over-mix; small lumps should remain. Let the batter rest for 5 minutes.
  4. Transfer approximately half of the batter into a squeeze bottle with a wide tip for detailing.
  5. Heat a non-stick griddle over medium-low heat. For each bunny, pour a 4-inch circle for the body and a 3-inch circle for the head. Use the squeeze bottle to draw two long oval ears and two 1.5-inch circles for the paws.
  6. Cook until bubbles form on the surface and the edges look set. Flip carefully with a thin spatula and cook the other side until golden brown.
  7. Assemble the bunny on a plate using the large circle for the body, the smaller circle for the head, and placing ears and paws accordingly. Decorate with whipped cream and coconut for the tail, banana rounds for paws, and berries for facial features.
