Ingredients:

  • 1 cup (120g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (240ml) buttermilk
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted

Instructions:

  1. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, and melted butter.
  3. Combine wet and dry ingredients gently until just mixed; small lumps are acceptable.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter.
  5. Pour about ¼ cup of batter on the skillet for each pancake.
  6. Cook until bubbles form and edges appear set (about 1-2 minutes). Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
  7. Repeat with the remaining batter, greasing the pan as needed.
  8. Stack pancakes and serve warm with your favorite toppings.
