Ingredients:

  • 500g All-Purpose Flour
  • 2 tbsp Baking Powder
  • 0.5 tsp Baking Soda
  • 1.5 tsp Fine Sea Salt
  • 1 tbsp Granulated Sugar
  • 170g Unsalted Butter, frozen and grated
  • 355ml Full-Fat Buttermilk, chilled
  • 2 tbsp Melted Butter for brushing
  • 1 pinch Flaky Sea Salt

Instructions:

  1. In a chilled bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  2. Using a box grater, grate the frozen butter directly into the flour mixture. Toss gently with fingers until butter pieces are coated and resemble coarse sand.
  3. Make a well in the center and pour in the cold buttermilk. Stir with a fork just until a shaggy dough forms.
  4. Turn the dough onto a floured surface. Press into a rectangle, then fold in thirds like a letter to create layers. Repeat the folding process twice more.
  5. Pat the dough to 1-inch thickness. Use a 2.5-inch round cutter to punch out biscuits with a clean vertical motion; do not twist the cutter.
  6. Arrange biscuits on a cast iron skillet or heavy baking sheet so they are just touching. Brush tops with melted butter.
  7. Bake at 425°F (218°C) for 15 minutes or until the tops are mahogany-colored. Sprinkle with flaky sea salt immediately after removing from oven.
