Ingredients:
- 1 lb ground pork or turkey
- 1/2 cup panko breadcrumbs
- 1/4 cup soy sauce
- 1 large egg
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 2 green onions, finely chopped
- 1/2 cup sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 1 tablespoon water
Instructions:
- In a large bowl, combine ground pork, breadcrumbs, soy sauce, egg, garlic, ginger, black pepper, salt, and chopped green onions. Mix well until all ingredients are integrated.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up.
- Preheat the oven to 400°F (200°C). Grease or line a baking sheet with parchment paper. Shape the meat mixture into 1-inch balls and place them on the baking sheet.
- Bake for 20-25 minutes, or until browned and cooked through (internal temperature of 165°F or 74°C).
- In a saucepan over medium heat, combine sweet chili sauce, sriracha, rice vinegar, lime juice, and sesame oil. Bring to a simmer. Stir in the cornstarch mixture to thicken.
- Once the meatballs are baked, transfer them to the saucepan with the sauce. Stir gently to coat evenly.
- Serve hot, garnished with additional green onions or sesame seeds, if desired.
