Ingredients:

  • 2 lbs (900g) boneless, skinless chicken breasts
  • 16 oz (450g) jar of your favourite salsa
  • 1 packet (1 oz or 28g) taco seasoning
  • 1/2 cup (120ml) chicken broth
  • Optional: 1 (15 oz or 425g) can of black beans, rinsed and drained
  • Optional: 1 (15 oz or 425g) can of corn, drained

Instructions:

  1. Lightly grease the inside of your slow cooker.
  2. Place the chicken breasts in the slow cooker. Pour salsa and chicken broth over the chicken. Sprinkle with taco seasoning. If using, add black beans and corn.
  3. Cover and cook on Low for 4-6 hours or on High for 2-3 hours, or until chicken is cooked through and easily shreds with a fork.
  4. Remove chicken from the slow cooker and shred it using two forks.
  5. Return the shredded chicken to the slow cooker and stir to coat it with the salsa mixture.
  6. Serve immediately and enjoy!
