Ingredients:
- 12 slices of cucumber (about 1 cm thick)
- 2 tablespoons (30g) of unsalted butter, softened
- 4 oz (113g) cream cheese, softened
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon dill weed (or 1 tablespoon fresh dill, finely chopped)
- Salt and pepper to taste
- 6 oz (170g) smoked salmon, thinly sliced
- Fresh dill sprigs for garnish
- Lemon wedges for serving (optional)
Instructions:
- Wash and slice the cucumbers into thick rounds. Place cucumber slices on a platter and lightly spread with softened butter.
- In a mixing bowl, combine cream cheese, lemon juice, dill, and a pinch of salt and pepper. Mix until well combined and smooth.
- Spread a generous amount of the cream cheese mixture onto each cucumber slice. Top with a piece of smoked salmon, folding it elegantly if necessary.
- Finish each canapé with a small sprig of fresh dill for decoration. Optionally, serve with lemon wedges on the side.
