Ingredients:
- 8 ounces (225g) cream cheese, softened
- 4 ounces (115g) goat cheese, softened
- 2 tablespoons (30ml) honey
- 1 tablespoon (15ml) orange zest
- 1/4 teaspoon (1.25ml) garlic powder
- 1/4 teaspoon (1.25ml) kosher salt
- 1/8 teaspoon (0.6ml) black pepper
- 1 cup (120g) dried cranberries, chopped
- 1 cup (100g) walnuts or pecans, toasted and finely chopped
- 1/4 cup (30g) fresh parsley, chopped
- 2 tablespoons (30ml) chopped fresh rosemary (optional)
Instructions:
- In a large mixing bowl, beat together the softened cream cheese, goat cheese, honey, orange zest, garlic powder, salt, and pepper until smooth and well combined.
- Cover the bowl with cling film and refrigerate for at least 1 hour to allow the mixture to firm up.
- In a separate bowl, combine the chopped cranberries, chopped nuts, parsley, and rosemary (if using).
- Using a spoon or small cookie scoop, scoop out portions of the chilled cream cheese mixture and gently roll them into 1-inch balls.
- Roll each cream cheese ball in the cranberry-nut mixture, pressing gently to ensure the coating adheres.
- Place the coated balls on a baking sheet lined with parchment paper (if using) and refrigerate for at least 30 minutes to allow them to set properly.
