Ingredients:

  • 4 large ears of sweet corn (unshucked)
  • 1/2 cup mayonnaise (120g)
  • 1/4 cup sour cream (60g)
  • 2 tablespoons lime juice (30ml)
  • 1 teaspoon chili powder (5g)
  • Salt, to taste
  • 1/2 cup crumbled Cotija cheese (75g)
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)
  • Lime wedges, for serving

Instructions:

  1. Fill a large pot with water and bring to a boil. Submerge the corn in boiling water and cook for 5-7 minutes.
  2. Preheat grill to medium-high. Remove the corn from water, shaking off excess moisture. Grill the corn for 3-5 minutes, turning occasionally, until charred in spots.
  3. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, and a pinch of salt. Whisk until smooth and well-blended.
  4. Brush each ear of corn liberally with the dressing while still warm. Sprinkle with crumbled Cotija cheese and optional cilantro.
  5. Serve immediately with lime wedges on the side.
