Ingredients:
- 4 large ears of sweet corn (unshucked)
- 1/2 cup mayonnaise (120g)
- 1/4 cup sour cream (60g)
- 2 tablespoons lime juice (30ml)
- 1 teaspoon chili powder (5g)
- Salt, to taste
- 1/2 cup crumbled Cotija cheese (75g)
- 2 tablespoons chopped fresh cilantro (optional, for garnish)
- Lime wedges, for serving
Instructions:
- Fill a large pot with water and bring to a boil. Submerge the corn in boiling water and cook for 5-7 minutes.
- Preheat grill to medium-high. Remove the corn from water, shaking off excess moisture. Grill the corn for 3-5 minutes, turning occasionally, until charred in spots.
- In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, and a pinch of salt. Whisk until smooth and well-blended.
- Brush each ear of corn liberally with the dressing while still warm. Sprinkle with crumbled Cotija cheese and optional cilantro.
- Serve immediately with lime wedges on the side.
