Ingredients:

  • 1 pound ground pork (or chicken or turkey)
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 3 green onions, chopped
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • Sesame seeds (optional)
  • Sriracha or sweet chili sauce (for drizzling, optional)

Instructions:

  1. Preheat a large skillet or wok over medium-high heat.
  2. Add ground pork (or chosen meat) and cook until browned and fully cooked, around 5-7 minutes. Break into smaller pieces with the spatula.
  3. Stir in minced ginger and garlic, cooking for 1-2 minutes until fragrant.
  4. Add the coleslaw mix to the skillet and toss everything together until the vegetables are slightly tender, about 3-4 minutes.
  5. Pour in soy sauce and sesame oil, stirring to combine. Cook for an additional 2 minutes.
  6. Remove from heat, sprinkle with chopped green onions and sesame seeds. Serve hot with your choice of sauce.
